900g (2 lb) Spinach
1.4 kilo (3lb) potatoes, peeled and chopped
120g (4oz) butter
300ml (1/2 pint) milk, warmed
180g (6oz) Anster Cheese
salt and pepper to taste
Place washed spinach in a large pan with no extra water, sprinkle with a little salt, cover and cook gently until it wilts, about 5 minutes. Drain and set aside.
Place the potatoes in a saucepan with salted water. Bring to the boil, cover the pan quickly return to the boil. Reduce the heat and simmer until tender, about 15 minutes, drain and return to the pan.
Mash the potato and add the butter and milk gradually, mix until smooth.
Add cheese and spinach, stirring until the cheese melts. Season with salt and pepper.
