Carrot, Kale and Lentil Dahl

Serves 2

100g red lentils

450ml veg stock

small grated onion

2 chopped tomatoes

1/2 tsp turmeric

1tsp garam masala

1 finely chopped red chilli

1 lage carrot, finely chopped

2 handfuls of kale, chopped

  • Put the lentils, veg stock, onion and the spices into a pan. Bring to a simmer and cook for 10 minutes.
  • Add the carrot and cook until tender, another 10-12 minutes.
  • Stir in the kale and cook for a couple of minutes until wilted.
  • Serve with naans. See naan recipe
