Spiced Root Veg and Kale Soup

1 tablespoon oil or butter
1 medium onion, chopped
2 garlic cloves, crushed
1/2 teaspoon of ground ginger
1/4 teaspoon chilli flakes
75g barley
500g mixed veg such as potatoes, turnip and carrots, peeled and diced
1.2 litre vegetable stock
125g curly kale, hard stems removed and leaves shredded
1 small bunch of fresh parsley, chopped
salt and freshly ground black pepper


Heat the oil or butter and gently fry the onion and garlic for 5 minutes until it softens.

Add the barley and vegetables (not the kale), stir to combine.

Add the stock, salt and pepper, spices and bring to the boil. Simmer for around 40 mins or until veg and barley have softened.

Add the shredded kale, cook for a further 15 mins, adjust seasoning , add chopped parsley and enjoy.
