Nasturtium Pesto
25g nasturtium leaves
1-2 mint leaves
1 clove peeled garlic
3 nasturtium seed pods
25g pine nuts
35g finely grated parmesan or hard goats cheese
25ml lemon juice
75ml olive oil
petals of marigold flower
salt and pepper to taste
- Whizz everything together (except petals and seasoning) in a food processor or blender for a couple of minutes until you have a soft consistency. Remove from blender, mix in petals and season to taste. Stir in through pasta, smear it on a pita or use as a dip.
