Leeks with Three Mustard and Cheese Sauce

3lb leeks- cut in half

2oz butter

3oz plain flour

3/4 pint milk

6oz grated cheddar cheese

1oz grated parmesan

2tbs breadcrumbs and 1oz grated cheddar for topping

1tbs wholegrain mustard

1tbs Dijon mustard

1st English mustard

salt and pepper

  • Preheat oven to gas mark 6 or 200C
  • Put leeks in a pan of cold salted water, bring to the boil and simmer for 3 mins or until tender
  • Drain and place under cold water immediately to stop the cooking process
  • Bring butter, flour and milk up to the boil, whisk continuously- once it is up to the boil, reduce heat and simmer for 2 mins
  • Add the cheese and mustard and season to taste
  • Put leeks in a shallow dish and pour the sauce over
  • Mix the breadcrumbs and cheese together and sprinkle on top of the leeks
  • Bake for 20 minutes until top is golden brown
