2 eggs, separate yolks from whites
450g courgettes, grated
1 tablespoon baking powder
1 tablespoon plain flour
1 small onion, chopped
125g feta cheese, diced
salt and pepper to taste
1 tablespoon of oil  for frying


Beat the egg whites until stiff and set aside.

Mix the rest of the ingredients together.

Fold in the beaten egg white.

Heat the oil in a frying pan and fry the mixture until golden brown on one side, turn and brown the other side. Cut into four and  serve with salad.
