Strawberry Bread

This delicious bread be eaten hot or cold for breakfast or desert.

Ingredients

310g Strawberries

390g plain flour

400g  sugar

7g ground cinnamon

6g salt

5g baking powder

295g vegetable oil

4 eggs

150g chopped pecans

Method

1)Preheat the oven to 350F, 180C,/gas mark 4.

2) Butter and flour two 9×5  inch loaf tins.

3) Slice strawberries and place in a bowl.

4) Sprinkle with a little sugar and leave until bread mix is done.

5) Put flour, remaining sugar, cinnamon, salt and baking powder in a bowl and mix well.

6)Blend the oil and the eggs with the strawberries and add to the flour mix blending until all the mix is moist.

7)Stir in pecans and divide into pans

8)Bake for 45-60 minutes

9)Leave the bread to cool in pans for 10-15 minutes then turn out and cool completely.
