1/2 small cauliflower, cut into small florets
a little butter or margarine
a good pinch of grated nutmeg
salt and pepper
75g Anster cheese, grated
150ml single cream
1 tablespoon grated Parmesan
Steam the cauliflower until just tender, drain and arrange in four buttered ramekins.
Sprinkle with nutmeg, a little salt and pepper and the cheddar cheese. Beat the eggs and cream together and pour over.
Bake in a preheated oven at 180C/ Gas 4 for about 20 minutes or until set and lightly golden, sprinkle with the Parmesan and serve.
