Carrot, Parsnip, Potato and Swede Roasted with Herbs


125g each of swede, carrots, parsnips and potatoes, peeled and cut into wedges.
2 medium onions, peeled and cut into quarters
1-2 cloves of garlic, chopped or crushed
3 tbsp olive oil
1 tbsp chopped, fresh herbs or 1 tsp mixed herbs
salt and pepper to taste.


Place prepared vegetables in a large bowl, add crushed garlic, olive oil, mixed herbs and seasoning, mix well to make sure the vegetables have a good coating.
Place in the  oven at 180 degrees and bake for 20-25 minutes until cooked, stir at least once during cooking.
