Beetroot Strawberry & Chocolate Cupcakes

Just ditch the strawberries for the winter version of this. Warning these are dangerously moreish!

100g caster sugar

100g butter

2 eggs

1 small beetroots

3 tbsp of good cocoa powder

100g self-raising flour

Icing: a ganache – which is chocolate melted slowly in a pan with some added sugar and a drop of cream. use a dark chocolate, double cream ( a spoonful) and two dessert spoons of sugar, stir till smooth.

Beat together butter and sugar. Add eggs, cocoa and grated beetroot. Add flour and mix until combined. Pile into 10 muffin cases. bake in oven at 175 C / 350 F / Gas 4 for about 20 -25 mins.

Blob ganache onto the top once they’ve cooled abit. Add stawberries to to top them off.
