This one’s from Zillah at the Steamie Bakehouse…

For the weeks when the salad bag from your veg box hasn’t got eaten in time and is in danger of meeting the compost bin. Also much more popular with small children than a bowl of salad!


1 large bag of mixed salad leaves
2 tablespoons olive oil
1 large onion
3 or 4 cloves garlic
1 teaspoon roast ground cumin (gently fry cumin seeds in a small pan until
they smell yummy, then grind)
1 teaspoon garam masala
about 150g red lentils
about 1.5 pints water
Salt and pepper


Wash your salad leaves well.
Chop the onion and fry in the olive oil in a medium sized saucepan until soft.
Add the garlic and spices and fry for a few moments more.
Rinse the lentils and add to the pan.
Add the water and bring to the boil. Simmer until lentils are tender,
about half an hour.
Add the salad and cram it down under the water, in a few minutes it
will have wilted. Now turn the heat off.
Blend until lovely and green.
Season to taste.
