Root Soup

The day before our box arrives we always struggle a bit with what to eat. So this soup is just one of those use everything-up-soups: easy and delicious! Just adapt depending on what you have available and how many you need to feed. This made enough for a bout 6 large bowls.

splash olive or rapeseed oil

4 small onions, chopped

1 garlic clove, bashed

2 bay leaves

2 huge parsnips, peeled and chopped

1 celeriac peeled and chopped

6 carrots, peeled and chopped

salt & pepper to taste

hot water/stock made with ½ teaspoon bouillon

Sweat the onions and garlic together in oil till soft. Add the root veg and bay leaves and allow to cook for a few minutes longer. Add enough boiled water to reach the top of the vegetables and add the bouillon. Put the lid on tight and cook at a rapid simmer for about 30 – 40 minutes. Whiz with a hand blender and serve.
