Oatcakes
2 oz rolled oats
3 oz oatmeal
3 oz wholewheat flour
5 tbsp olive oil
¼ pint water or apple juice
Mix together the first three ingredients. Add the oil until it is well mixed. Slowly add the water or apple juice until you have a good firm dough. Roll the dough out on a floured surface and cut into circles with a pastry cutter. Lay these onto an oiled baking tray and bake in a moderate oven for 20 – 30 minutes.
