Poor Man’s Potatoes

This is a great way to use up leftover potatoes.  Ideal for Sunday breakfast.

Cut cooked potatoes into chunks and fry in oil or butter with a couple of cloves of minced garlic.  Add a sprig of rosemary and lots of salt and pepper.  Also delicious without the rosemary and with a teaspoon or two of smoked paprika instead.
