Mini Pasties with Oatmeal Pastry

Oatmeal Pastry Parsnip PastiesRead the whole recipe through before starting.



4 oz flour
4 oz medium oatmeal
3 oz fat
half a teaspoon baking powder
pinch of salt


Rub fat into flour and oatmeal. Add baking powder and salt. Mix to a firm dough in a little cold water. Knead, roll out then add filling and bake in a hot oven.

For the filling:

an onion
a bunch of kale
a large carrot
a large parsnip


Finely chop the onion, carrot and parsnip. with hand blender. Fry these in a knob of butter in  pan with the lid on. Add a little water/stock/apple juice as required. Allow to cook for 5 – 10 minutes. Add finely chopped kale. Allow mixture to cool. Stir in two tablespoons of grated cheese. Remove excess water. Season. Put heaped spoonfull onto circles of rolled out pastry. Fold over and squash down edges.

Brush with beaten egg.

Cook in pre-heated oven until golden – about 25 minutes. This made enough for 3. Spotty plates optional but recommended.
